Sun Dried Tomato, Red Onion and Garlic Risotto and Balsamic Chicken

I took The Troll to see Father Christmas in the sinister grotto at our local shopping centre. The theme seemed to be Gurning & Evil Alice in Wonderland juxtaposed against exposed wiring and overloaded gangplanks. Very festive.

Still, The Troll saw past all that and was memorised by the fairylights and nutty high pitched carol soundtrack and followed the Tallest-Christmas-Elf-in-the-World into Santa's lair. I mean grotto.

It has to be said he was a superb Santa with twinkly blue eyes and when the Troll told him that Squirky keeps pulling all the decorations off the tree he said 'that means you have extra fun in putting them back on again'. Ahhh trust jolly old Santa to put a happy festive swing onto something I was beginning to get quite irritated about myself.

The Christmas invites are coming thick and fast now so the dieting days will become fewer on the ground. And if it's not Christmas do's then it's X-Factor parties. Xmas and XFactor - what a winning crimbo combo.

Ho ho ho - I'll have a tummy fatter than Santa's by January.

WHAT WENT INTO IT FOR TWO:
  • 1 pack of Gallo Pronto Risotto - Sun Dried Tomato Flavour
  • 1 red onion
  • 1 clove of garlic (I love the ready peeled fresh ones from Tesco)
  • 350g chicken mini fillets
  • a few glugs of balsamic vinegar
  • 2tbsp extra virgin olive oil (HEALTHY B OPTION PER SERVING)
  • 56g cheese (HEALTHY A OPTION PER SERVING)

HOW I DID IT:
  • Place the chicken fillets in an oven proof dish and cover with balsamic so all of chicken is covered. Roast for 25 minutes
  • Dice the onion and garlic finely and fry in olive oil
  • Make risotto as per pack instructions
  • Combine the onion, garlic and risotto
  • Top with pieces of chicken and cheese

Winter's Roasted Lamb & Chunky Cut Vegetables with Mint and Almond Pesto

I managed to mess my back up by putting my socks on! I was stood balancing on one leg whilst I slipped the sock on my other foot to protect my tootsies from the 'weather event' outside when suddenly a shooting pain pierced through my right buttock and I landed in a heap on the floor.

Thankfully The Troll and Squirky were residing at 'Their Country Residence' (i.e. The In-Law's From Heaven) so I whilst I was reeling in agnony on the floor for 20 minutes trying to work out how to stand, at least I didn't have two children depending on me for breakfast.

It turns out my lower back is still weak from my two pregnancies, and although the physio didn't say it, I'm willing to bet my excess weight doesn't help.

So this week has mostly been about pelvic floor exercises...squeeze in...hold for ten...and out.....

Sticking to plan after having three weeks off has been difficult. More so because I'd got into bad habits than actually craving anything. I'd got used to grabbing a biscuit or two whenever I had a cup of tea. I've caught myself reaching for the biccie tin on more than one occasion without meaning too.

Also, I keep getting these signs......signs that I am meant to eat badly....for instance, what with all this snow we haven't had post for days, but we still get about three pizza delivery leaflets through the door everyday. Someone, somewhere is telling me to eat pizza, right?

I'm not denying myself completely though. True to my philosophy when I picked up Slimming World for the third time back in February, although I'm back on plan I'm still going to have the odd day where dieting isn't appropriate. Dieting mostly isn't appropriate around Christmas so I fully intend to have one or two days a week off right through December when we have parties or friends over. How bad am I? I hope Santa still brings my pressies.

Tonight's dinner came courtesy of this recipe. It's an 'autumn' dish but it worked just as well on a cold winter's night.

WHAT INGREDIENTS I SYNNED/CHANGED:
  • I dropped the avocado (the list of ingredients calls for avocado, which sounds weird and decided not worth the syns, but when I actually did the recipe it turns out it meant artichoke which actually would have been quite nice)
  • I used a mixed bag of pre peeled and cubed butter nut squash and sweet potato
  • I substituted the olive oil with fry light
  • I omitted the bread
  • White wine (1 SYN PER SERVING)
  • Almonds (2.25 SYNS PER SERVING)
  • Mustard (0.25 SYNS PER SERVING)
  • Olive oil for pesto (1.5 SYNS PER SERVING)
(I ate two portions, so 10 syns for the day)

Spicey Prawn and Chicken Chowder

I'd love to say that my 3 week blog-absence is simply down to the fact that we have not had internet access since the house move. I'd love to say that although my blog hasn't been updated I have of course stuck to plan and lost another 7lbs.

I'd love to say that.

But that would be a big fat lie. A lie almost as big and fat as my arse.

During the move and the ensuing weeks whilst everything settled back in to place (including getting broadband access) it felt as if normal rules just didn't apply. I've eaten like a pig, mostly takeaway and convenience foods and eating out. The Troll has been staying up late, and Squirky is still high on the thrill of having so much space to commando crawl across.

We've all gone a little bit doolally with happiness since we moved into our dream home.
This disregard for rules coupled with lack of internet (i.e no blog to keep my on straight and narrow, no online Tesco shop to help me plan, no Facebook support) meant Slimming World wasn't possible (in my mind).....

Astonishingly, despite not weighing in since 10th Nov and not sticking to the plan for a single day in three weeks, I have only managed to put on 1lb! Absolutely bizarre. I guess the move was body-magic-tastic and the new house has stairs, so perhaps I am just moving more generally?

My first Slimming World meal of December 2010 is a warm and filling Prawn and Chicken Chowder. Perfect for a snowy night, when all the family are bunged up with head coles. The chilli blows the cobwebs out a bit!

WHAT WENT INTO DINNER FOR TWO:
  • 1 pack of mini chicken fillets cut into cubes
  • 1 red onion chunkily sliced
  • 3 shallots
  • 3 small orange peppers chunkily sliced
  • Chilli flakes
  • 200ml white wine (3.4 SYNS PER PORTION)
  • 1 tin chopped tomatoes and garlic
  • 3 garlic cloves
  • 2 pinches saffron dissolved in water
  • 450g prawns
  • Flat leaf parsley
  • Uncle Bens express Long Grain Rice (0.5 SYNS PER SERVING)

HOW I DID IT:
  • Brown the chicken in frylight and set aside
  • Fry onions and peppers in frylight for 10 mins on a low heat
  • Add the chicken back in with the grated garlic and chilli flakes, cook for 2 mins
  • Add wine and allow to boil for 2 mins then add tomatoes and saffron
  • Bring back to the boil then simmer for 10 mins
  • Add seasoning
  • Add prawns for a few moments and serve with rice (cooked as per pack instructions) and sprinkle with parsely
