Bacon Burger in a Mushroom Bun

Squirky woke me at 03.47am crying for a feed. I on the other hand never wanted to see food again. I had raging heartburn and my stomach was making the unholiest of noises. It's amazing what havoc naughty food can play with your body.

So bye bye fat. Bye bye sugar. Bye bye mindless gorging. Until next week anyway, because we're off to the south coast for a caravan holiday. Any time the word 'holiday' comes up in my life you can safely assume this includes a holiday from dieting.

This week I'm having a 'mum-off-duty' evening and am off to watch Sex and the City 2 with my girlies. I've checked out the Carluccios menu and have picked a SW friendly looking tuna salad. I'll be sticking to diet coke rather than having any Carrie Bradshaw inspired cocktails and
I'm planning to take grapes and maybe some quorn cocktail sausages instead of popcorn. I'll spend the money I have saved on cinema snacks by investing in a 'Premier Seat' - more room to spread my blubber-butt!

Three days was all it took to lose my Slimming World mojo though....Tuedays dinner sure did have comedy value - check out the 'cut-too-thin-boiled-too-long' chips! The "Bacon Burgers in Mushroom Buns" were tasty but looked a bit drab. Still, it filled a hole.
  • Very lean mince
  • Onion
  • Egg
  • Bacon
  • Field Mushroom fried in garlic and fry light (and patted dry)
  • Seasoning, herbs, balsamic, Worcestershire
I combined the mince, egg, seasoning etc and finely diced onion and shaped into patties. I made 4 and put two away in the freezer for another day.

I fried the patties in frylight, topped with HEA cheese and grilled until nicely melted. I then grilled the bacon, and fried the field mushrooms in garlic and frylight, and then assembled in one great whopping burger stack, served with chips. Looked a mess but tasted just fine.


BREAKFAST: 2 RASPBERRY MULLER YOGHURTS AND HALF A BAG OF GRAPES; LUNCH: 95% FAT FREE CHILLI CHICKEN SUPERNOODLES WITH 8 OLIVES (1 SYN); DINNER: "BACON BURGER IN A MUSHROOM BUN" WITH CHEESE (HEALTHY OPTION A) AND SLIMMING WORLD CHIPS & A TBSP OF VERY LOW FAT MAYO (; SNACKS: 2 PACKETS OF HAM, 1.5 SYNS) BANANAS, CUP OF TEA WITH DASH OF MILK (0.5 SYNS); PUDDING: 2 BOWLS OF FROZEN MANGO CUBES AND ONKEN FAT FREE YOGHURT. 2X ALPEN LIGHT BARS (HEALTHY B OPTION). I'VE BEEN REALLY HUNGRY ALL DAY. THINK THE DAYS OFF RE-AWAKENED MY TUMMY.

Six years ago I tried the Atkins diet. A skinny friend recommended it and I wanted to be skinny more than anything in the world. I can't remember how long I stuck to it but I clearly remember that I got miraculously thin.

Every lunchtime I would head to McDonalds for
3 double cheeseburgers with the buns discarded. If I was at home I would have a enormous steak with a side of mushrooms fried in olive oil and double cream. If I was doing a night-shift I would buy a rotisserie chicken on the way in
and pick at it overnight.

I would weigh myself before I went to bed and again in the morning, finding I had lost 5lbs overnight. As I got teenier and tinier I also got greyer and spottier. I felt like complete crap, but loved seeing my hip bones.

Bizarrely it was at the height of my spottiest and greyest phase that I was wooed by my Chunky Lover. Unwittingly he saved me from a life of red meat and cream. He took me on dates to Thai restaurants and nights in with a takeaway, forcing me to break the Atkins spell, for which I will be forever grateful. He had no idea he was helping me, he was just picking places he liked and I didn't want to lose him by asking to go a steakhouse night after night.

When the weight all piled back on (sorry my Chunky Lover), it came back in a very disproportionate way, and ever since then whenever I put on weight it always shows most above my waist line. Very unattractive.

I'm reminded of this as I complete day three of my Diet Amnesty and already I have started to look bloated and swollen. I'm looking forward to dashing back into the open arms of Slimming World but thoroughly enjoyed my three days of food freedom.

Debauchery and Mayhem Part 2: Return of the Blubber

I woke up on Sunday morning and and felt as if there was food stuffed right up to the top of my throat. It probably didn't help that I had a handful of giant chocolate buttons just before bed. I only wanted two but they had melted in the car during last weeks sunny spell and had solidified in one massive chocolate blob.

Whilst I'm off plan I'm loving the freedom of not having to scan a menu for the most Slimming World friendly option and ask for it without dressing or butter or anything nice. I enjoyed not phoning my friends yesterday and forewarning them that I'd need a healthy option or asking to bring my own food. This is all quite liberating. However, h
ere's an odd thing:
I can honestly say that McDonalds chips are not nearly as tasty as the SW ones I have been making, and I feel lethargic and shaky from the sugar, which I now realise was how I felt a lot of the time before I got healthy.

So whilst I'm enjoying not thinking much about what I'm eating, I'm really looking forward to Tuesday and getting on back on plan. Weirdo.

MY MUM IN LAW ROCKS; DINNER: M&S HAM AND MUSHROOM CARBONARA, CHOCOLATE NEW YORK CHEESECAKE AND A TRIPLE CHOCOLATE SUNDAE; SNACKS: CADBURYS CARAMEL BAR, PACKET OF DORITOS, THE LAST OF THE GU MILLIONAIRES FLAPJACKS, 2 CANS OF COKE, HANDFUL OF TOFFEES, 1 BOTTLE OF BULMERS. IS THIS HOW I USED TO LIVE MY LIFE?

Debauchery and Mayhem

Who'da thunk it? In the "dieting" versus "eating-fatty-sugary-naughtiness" toss up, the

fatty-sugary-naughtiness

won.

I made the most of my first 24 hours of diet abstinence and even got the whole family involved. What a great mum I am!

My Chunky Lover and I started off the day with a bacon butty, using up an entire packet of bacon with the fat still on. For added enjoyment I had a fresh loaf sliced lengthways at Tesco. The aesthetic value made the sandwich decadent and tastier.

I
shared a small bag of sweet popcorn when I took
the Troll to the cinema for the first ever time. We saw The Princess and the Frog and it was Disneytastic. I'm not ashamed to say I shed a tear or two when Raymond the Firefly got stepped on by a Voodoo doctor and became a distant glowing star in the sky.

I'll blame the next fatty-fest on the emotional eating
cycle triggered by the trauma of Raymond's death. Troll asked to visit 'Old McDonalds' where she picked at a fish finger happy meal and I managed a quarter pounder meal with choccie milkshake, in an act of solidarity.

Oh god, but it doesn't stop there. We spent all afternoon with wonderful friends who laid out a smorgasbord of pizza and quiche and ciabatta and cheese and salami and olives. (oh, and salad...but obviously I didn't go near that.)

And I haven't even mentioned the snacks yet.

So I think we can safely say that

fatty-sugary-naughtiness kicked dieting's butt on Saturday. I wonder who will win round two on Sunday? Ha ha ha!

Paella

Here's an odd thing. I had intended to be 'off-plan' for the Bank Holiday weekend, but now Saturday morning is here and I actually want to keep dieting!

In the past I have set myself a weight goal but once I got there I reverted my eating habits and put more weight back on. When I started SW again this year I decided that because I am going to be eating healthily for the rest of my life it really doesn't matter in the grand scheme of things if
I eat like a pig for
a couple of days each month. I don't want to deny myself fish and chips on the beach, drinks and cake at a birthday, wedding breakfast on someone else's big day or a pizza when I just feel like I want it.

So if I lose 1lb over a month because I'm having the odd week where I put on, then it's all good in the long term.

I know in SW you have your Syns and can treat yourself for a bit of chocolate each day, but that really doesn't compare to eating an entire tub of ice-cream yourself, then hiding the tub at the bottom of the bin and replacing it so no-one knows or eating nutella straight from the jar. If I deny myself these simple pleasures then I would die a miserable skinny person.

But........here I sit at the start of my weekend thinking about the three days of debauchery we have planned, including a boozy bbq, a mother-in-law roast dinner (as in my mother-in-law will make it, I don't mean we are roasting her) and using up our Tesco Reward vouchers at Pizza Express, and all I can focus on is getting on those scales on Wednesday and really wanting a big loss.

Hmmmm, what to do?.............................

P.S - just found a packet of chewing gum in my bag and remembered I had a piece on Thursday night to try and eliminate the garlic smell. I wonder what other Syns I have miscounted this week?

Yesterdays dinner was "Paella" from this months SW magazine. I made it for my Chunky Lover and I, and even though it's meant to serve 4 and we scoffed the lot:

  • Diced chicken breast
  • Onion

  • Red and yellow peppers

  • Garlic

  • 2 tsp smoked paprika
  • Saffron
  • Chopped tomatoes
  • Chorizo (6 SYNS in my serving)
  • Chicken bovril stock
  • Paella rice
  • Prawns
  • Peas
  • Lemon and seasoning to serve

I fry the chicken till brown, then set it aside whilst stir frying onion, chorizo and peppers. After 8 minutes add garlic, paprika and saffron for one minute. Add chicken, tomatoes stock and seasoning. Simmer and cook for 10 mins.

Add rice, bring back to boil, simmer for 10mins. Add prawns and peas for 15-20mins. Et voila.

BREAKFAST: MELON AND THEN SOME SCRAMBLE EGGS AND THEN AN ALPEN LIGHT BAR (HALF MY HEALTHY B OPTION) AND THEN A BANANA AND THEN ANOTHER BANANA. AND A THIRD. SOMEONE STOP ME; LUNCH: TUNA BAKED POTATO WITH CHEESE (HEALTHY A OPTION) AND VERY LOW FAT MAYO (1.5 SYNS) AND ALPEN LITE BAR (OTHER HALF OF HEALTHY B OPTION); DINNER: "PAELLA"; SNACKS: CUP OF TEA (0.5 SYNS),

PUDDING:

FROZEN MANGO CUBES AND ONKEN FAT FREE STRAWBERRY YOGHURT

Crispy Crunchy Chicken

I've been addicted to Facebook for some time now. Scarily so. I get itchy without access to a computer. My Chunky Lover only gets to talk to me if he uses Facebook chat. Now I have a valid excuse to be looking at it: I've joined the Slimming World Facebook page, and I'm being inspired by fellow slimmers. Burgers in a mushroom bun! Brilliant idea. Sadly I also learnt that quorn cocktail sausages have syns :( They are 0.5 Syns for 2 sausages. I thought they free so have miscounted my Syns this week. Just goes to show it's worth double checking what you think you know.

So, Facebook has become my Image Therapy. I don't go to a consultant because I follow the diet on-line. Now I have 24hr access to support and recipe ideas.

One of the facebookers shared a recipe idea to rival KFC, and I tried it last night.

"Crispy Crunchy Chicken".

I made this for two people:

  • Chicken strips
  • Chicken bovril
  • Egg
  • Mixed herbs
  • Mixed spices
  • Mild Chilli powder
  • Black pepper
  • 4 pieces of Wholemeal bread (HEALTHY B CHOICE)

Toast the bread until dry, blend it and add all the herbs and seasoning.

Coat the strips in bovril and egg. Dip the sticky strips in the bread crumb mixture and bake in over for 30mins. Serve with SW chips and alphabetti spaghetti!

You don't want to know how long I spent trying to spell 'Slimming World' on my plate for the photo before giving up. My dinner got cold...

Pesto Pasta

Oh er. I felt all out of sorts yesterday. When I plan my week of meals I only account for days where I'm eating with my Chunky Lover, assuming that if I eat alone I'll just think of something that day and that I don't need to make an effort. I went out last night to a pub quiz (diet coke for me please), so my Chunky Lover had a finest spag bol from the freezer and I was kind of free falling through the day without a clue what to eat, which turned into a crazy ham and fruit snacking frenzy.

At 2pm I managed not to burn some savoury rice and ate that, and then filled up on pasta just before I went out so I wasn't tempted by pub grub.

I usually eat pasta plain if it's only me eating it, but I came across this basic "Pesto Pasta" recipe so I added some roasted tomatoes and olives for extra flavour and Bob's your uncle. (Literally in my case - call out to Uncle Bob).

A recipe for one person:

  • Tsp olive oil (2 SYNS)

  • Basil

  • Garlic

  • Pasta

In retrospect perhaps I shouldn't have eaten quite so much garlic before socialising!

Spanish Chicken

Wednesday 05.30am: oh wow. What an utter disappointment. I feel like a fool for being so proud of myself this week, eating well and sticking to plan. I only had 30 Syns this week. And yet I have lost no weight at all.


Can 'star week' really be to blame for this travesty? Curse the curse. I'd love to say 'oh well, it'll show in next weeks results', but I had already planned to take a 3 day diet break when we visit friends for the Bank Holiday weekend, and had factored in a gain for next week.


Okay, it's 3 days till the weekend. Still time to kick some blubber-butt. Plus I'm inspired to try the "KFC" style chicken recipe a kind gentleman posted on the Facebook Slimming World page.


And anyway, it's only 5.30am. I usually weigh myself at 9am. I'll try again then and see if and extra three hours of food optimising makes a difference.


Wednesday 09.00am: So now I have lost 2lbs. It seems 3 hours does make a difference. I weigh in on the Wii fit and it does always tell me that your weight can fluctuate 2.2lbs during the day. I'm definitely logging my under 15stone weight as my achievement for this week! 05.30am didn't happen!!!!


We had the simplest meal ever last night, "Spanish Chicken".

For 2 people you'll need:

  • Jar of Knorr Chicken Tonight Spanish Chicken sauce (6 SYNS)

  • Chicken pieces

  • Rice

I just brown the chicken, add sauce for 20 mins. Boil rice and serve.

I wish the rest of life was a simple as this recipe.

Prawn Balls and Stir Fry Noodles

OH. MY. GOD. The Troll ate a plateful of "Prawn Balls and Stir Fry Noodles". This is the child that exists on plain pasta, cocktail sausages and yoghurt. This is the girl that accidentally ate a piece of carrot during a Sunday roast and immediately vomited on her plate. Not only did she eat a plateful but she asked fore more declaring that peppers and courgettes are yummy.

Maybe the sun has got to my head and I imagined it?...

I left out the chilli and spring onions from the prawn balls for the toddler meal but kept them in for my Chunky Lover and I. A meal that all the family enjoy? Can it be true? This will definitely be a summer staple.


The recipe came from the July 2010 Slimming World magazine, which you can subscribe to for other glorious recipe ideas here.

The way I made it for 4 people went like this:

  • Bunch of spring onions

  • Bunch of coriander

  • 375g prawns fresh or defrosted

  • 1 tbsp cornflour (1 SYN PER 1/4 TBSP)

  • 1 egg

  • Dried egg noodles

  • carrot

  • Garlic

  • Red pepper

  • Courgette

  • Pak choi

I blended half the spring onions, garlic and coriander, then added the prawns, cornflour and egg and blended again.


I left the mixture in the fridge to firm up whilst I took the girls out to play for an hour or two.

Then I took small handfuls of the mixture and made into little patties which were fried in Fry Light for 12minutes turning half way through.

The oodles of noodles were boiled, whilst I fried the thinly sliced veg and the remainder of the spring onion and garlic for 3 minutes. Thwn mis to noodles and stir fry together.

I served it up with light soy sauce and lime wedges for the grown ups and plain for the kids.

BREAKFAST 1: MELON SLICES AND TWO BANANAS; BREAKFAST 2: SCRAMBLED EGG - I WAS FEELING IN A TWO BREAKFAST KINDA MOOD; LUNCH: "PRAWN BALLS AND STIR FRY NOODLES" AND 2 ALPEN LITE BARS (HEALTHY B OPTION); DINNER: PASTA TWIRLS WITH HOT TOMATOS AND CHEESE (HEALTHY A OPTION); SNACKS: BANANA, FROZEN MANGO CUBES AND ONKEN FAT FREE YOGHURT
