Pesto Pasta

Oh er. I felt all out of sorts yesterday. When I plan my week of meals I only account for days where I'm eating with my Chunky Lover, assuming that if I eat alone I'll just think of something that day and that I don't need to make an effort. I went out last night to a pub quiz (diet coke for me please), so my Chunky Lover had a finest spag bol from the freezer and I was kind of free falling through the day without a clue what to eat, which turned into a crazy ham and fruit snacking frenzy.

At 2pm I managed not to burn some savoury rice and ate that, and then filled up on pasta just before I went out so I wasn't tempted by pub grub.

I usually eat pasta plain if it's only me eating it, but I came across this basic "Pesto Pasta" recipe so I added some roasted tomatoes and olives for extra flavour and Bob's your uncle. (Literally in my case - call out to Uncle Bob).

A recipe for one person:

  • Tsp olive oil (2 SYNS)

  • Basil

  • Garlic

  • Pasta

In retrospect perhaps I shouldn't have eaten quite so much garlic before socialising!

BREAKFAST: A BANANA. WHAT KID OF A PATHETIC BREAKFAST IS THIS?; LUNCH: BATCHELORS CHICKEN SAVOURY RICE AND 2 ALPEN LITE BARS (HEALTHY B OPTION); DINNER: "PESTO PASTA" WITH ROASTED CHERRY TOMATOES AND 8 OLIVES (1 SYN) AND CHEESE (HEALTHY B OPTION); SNACKS: A PACKET OF THICK CUT HAM. YES THE WHOLE THING;

PUDDING:

FROZEN MANGO CUBES AND ONKEN FAT FREE STRAWBERRY YOGHURT
