This is a brief insight into my mind right now.

And wow!, there are so many ways that you can satisfy a pizza craving with a little invention. Thank you to all the lovely ladies who have sent recipes for low syn pizza - they all sound delicious.

Thing is though......I need a pizza. A real pizza-boy-delivered thin crust 12 inch with MASSES of hot melted cheese. None of this 42g low fat or 28g full fat malarkey. I don't even want to know the weight of the cheese. I just want it to make my fingers shiny with grease when I pick up a slice.

I'm riding the crave-wave right now and only the real thing will suffice.

On the upside, The Troll told me
"You have done a great job today mummy. A great job of looking after me - you can have a sticker".

Also, I have stuck to my premeditated meals today. So HA! to you pizza!!!! You won't get me!!!

I found the original recipe for tonight's dinner in "Good House Keeping - Easy to Make Favourite Family Meals" and I changed some ingredients because I couldn't get them, or just weren't SW friendly.

WHAT WENT INTO IT FOR FOUR PEOPLE
  • 4 chicken pieces cut into slices
  • 114g chorizo (2.5 SYNS PER SERVING)
  • 1 onion - chopped
  • 2 garlic cloves
  • 1 tsp chilli powder
  • 2 sweet red peppers pointed - deseeded and chopped
  • 650ml passata
  • 1 tbsp tomato puree (0.25 SYNS PER SERVING)
  • 200ml chicken stock
  • 400g butter beans
  • 100g baby new potatos
  • bay leaf
  • 100g baby spinach
HOW I DID IT
  • Preheat oven to gas mark 5
  • Brown chicken in fry light and set aside
  • Fry chorizo in same pan, set aside half to harden
  • Add garlic, onion and chilli powder for 5 minutes
  • Add pepper, fry for 3 minutes
  • Add pasata, tomato puree, stock, beans, potatoes and bay.
  • Cover and simmer 10 minutes
  • Add chicken, cook in oven for 35 mins
  • Remove bayleaf.
  • Add spinach, when it wilts serve
  • Crumble hardened chorizo and sprinkle on top

BREAKFAST: 3 FRIED EGGS, 3 QUORN SAUSAGES, CUP OF TEA WITH DASH OF MILK (0.5 SYNS): LUNCH: GALLO RISOTTO PRONTO, BASIL, CHEESE (HEALTHY A OPTION); DINNER: "CHICKEN CHORIZO AND BUTTERBEAN CASSEROLE"; SNACKS: 1 BANANA, GRAPES, STRAWBERRIES, 2 ALPEN LIGHT BARS (HEALTHY B OPTION); PUDDING: FROZEN BLUEBERRIES AND 2 CHERRY MULLER LIGHTS, CARIBBEAN COCONUT HOT CHOCOLATE OPTIONS (1.5 SYNS)
