Slow-Roasted Garlic & Lemon Chicken and Braised Little Gems

Wooo hooo! Yesterday was fun! I ate shameful amounts of tasty rubbish last night whilst my "partner in food-crime" and I spent the evening laughing at ourselves.

We'd like to think we are half way intelligent women with ample amounts of common-sense. We understand what constitutes healthy eating, and that healthy food in normal portion sizes and exercise will keep you fit and trim. So why do we pay someone a fiver a week to repackage this as a 'miracle diet' in order for us to stick to it?

Because we are WEAK! and we admit it. I need the discipline enforced upon me by being public about my weight. The support and advice keeps me on the straight and narrow....

Whilst we cursed ourselves for not being the sort of girls that can eat two chocolates from a box and leave the rest alone I spotted this leaflet on the pub table.

I'm making "Slow-Roasted Garlic and Lemon Chicken and Braised Little Gems" for dinner.

WHAT WENT INTO IT FOR TWO PEOPLE
  • Chicken:
  • Tesco chicken fillets
  • Half a head of garlic split into unpeeled cloves
  • 1 unwaxed lemon cut into quarters
  • Half a handful of thyme
  • 1 tablespoon oilve oil (3 SYNS PER SERVING)
  • 75ml white wine (2.5 SYNS PER SERVING)
  • Black pepper
  • Braised Lettuce:
  • 2 gem lettuces
  • 200ml chicken bovril stock
  • 20ml olive oil (2 SYNS PER SERVING)
  • Thyme
  • Salt and Pepper
HOW I DID IT
  • Chicken:
  • Preheat oven to gm3
  • Put chicken, lemon, garlic and thyme leaves in roasting tin and cover thoroughly with olive oil, then spread out.
  • Top with white wine and pepper and cover tightly with foil, roast for 2 hours
  • Remove foil and turn up to gm6, and cook for 45mins more until lemons caramelise
  • Lettuce
  • Cut of ends of lettuce and fit into baking dish, pour over chicken stock
  • Drizzle with oil, thyme and seasoning
  • Cover with foil and roast for 20mins at gas mark 6


BREAKFAST: 2 BANANAS, APPLE, ACTIVIA FAT FREE FOREST FRUITS YOGHURT, CUP OF TEA WITH DASH OF MILK (0.5 SYNS); LUNCH: 2 ALPEN LIGHT BARS (HEALTHY B CHOICE); DINNER: "SLOW ROASTED GARLIC AND LEMON CHICKEN AND BRAISED LITTLE GEMS"; SNACKS: APPLE, 3 SLICES OF HAM, GRAPES; PUDDING: FROZEN BLUEBERRIES AND 2 MULLER LIGHT YOGHURTS, OPTIONS HOT CHOCOLATE (HEALTHY A MILK AND 1.5 SYNS)
