Chicken, Mango and Vermicelli Noodles

The Troll's birthday was a massive success party wise. The flat was turned into a grotto, thanks to fairy lights and paper butterflies, and her birthday tea went down a treat. It wasn't such a success diet-wise. I enjoyed birthday cake and a Chinese meal in the evening when I was deemed physically incapable of cooking having spent an exhausting 2 days creating a birthday wonderland.

And the exhaustion has impeded my ability to plan meals for the next 7 days, so the Tesco order I am about to place to feed us from Saturday through to Friday mostly consists of tried and tested faves.

Tonight I am trying another recipe from 'Food from the Sun' by Neven Maguire. I have fallen in love with this book and am in danger of replicating the whole thing on this blog as every recipe appears SW friendly, so in respect to the author I repeat his recipes unless I alter them significantly to fit with the plan - you'll have to find him at the library or buy the book! Believe me it's worth looking through, the food tastes fabulous.

However, here are the ingredients I used:.
  • Tesco chicken breasts
  • 50g vermicelli noodles
  • 1 red onion
  • Mint leaves
  • Mango cut into strips
  • 10g cashew nuts (1.25 SYNS PER SERVING)
  • 1.5 tbsp soy sauce
  • 1 tbsp sweet thai chilli sauce (0.75 SYNS PER SERVING)
  • Juice of 1 lime
  • 0.5 tsp mild curry powder
  • Crushed garlic clove
  • 1 tsp caster sugar (0.5 SYNS PER SERVING)
  • Tbsp basil leaves
  • 2 tbsp extra virgin olive oil (HEALTHY B CHOICE PER SERVING)
This created a marinade for the chicken, and a dressing for the noodle and chicken salad.


BREAKFAST: SPAGHETTI HOOPS AND 5 SCRAMBLED EGGS, PUDDING RICE WITH VANILLA MULLER LIGHT AND BLUEBERRIES, CUP OF TEA WITH DASH OF MILK (0.5 SYNS); LUNCH: TUNA MAYO BAKED POTATO WITH CHEESE (HEALTHY A OPTION AND 0.5 SYNS), CHERRY TOMS AND CUCUMBER STICKS; DINNER: "CHICKEN, MANGO AND VERMICELLI NOODLES"; SNACKS: ALPEN LIGHT BAR (3 SYNS); PUDDING: FROZEN BLUEBERRIES AND 2 MULLER LIGHT YOGHURTS
