Indian Summer BBQ - Salad Dressing & Choccie-Banana Pud

Poor Squirky has a cold. True to form she is grinning and playing games, but she is snuffling and has a pathetic little cough that breaks my heart.

Her blocked nose keeps waking her so she hasn't slept a huge amount tonight, which translate to mummy not having slept a lot tonight.

Still, we have guests today so extra foundation is applied to cover the eye bags, and a manic grin to mask the sleep deprivation induced insanity.

As the good weather has made a late reappearance we are getting the BBQ out for it's swan song.

We're serving classic BBQ fayre including burgers, salad, crisps and alcohol.

I'm having as much to eat as the non-fatty sat beside me, including syn free pork and apple sausages from Joe's, chicken strips in garlic lovers shaker, mini roast spuds in garlic salt and fry light, salad with roasted cherry tomatoes and sweet onions and olives (8 FOR 1 SYN), with a dollop of very low fat mayo (0.5 SYNS). A pretty hefty meal!

I also indulged in a little pudding! The whole event well within my syns allowance.

And now to bed. PLEASE sleep well Squirky, poor snuffle-head.

WHAT WENT INTO SALAD DRESSING FOR 6:

  • Zest and juice of one lime
  • A finger tip sized peice of ginger
  • 3 tablespoons of honey (1.25 SYNS PER SERVING)

HOW I DID IT:

  • Finely grate the ginger and mix all ingredients together!

WHAT WENT INTO PUDDING FOR 6:

  • 6 bananas - cooked (4 SYNS PER PERSON)
  • Family sized galaxy caramel (16g IS 4 SYNS)

HOW I DID IT:

  • Don't peel the bananas but slice length ways
  • Stuff with chocolate pieces
  • Wrap in tin foil and place on BBQ for 10 mins
  • Serve!
BREAKFAST: 4 SCRAMBLED EGGS WITH SPAGHETTI HOOPS; LUNCH: "INDIAN SUMMER BBQ - SALAD DRESSING & CHOCCIE-BANANA PUD"; DINNER: LEFT OVER BBQ FOOD; SNACKS: 2 ALPEN LIGHT BARS (HEALTHY B CHOICE); PUDDING: FROZEN BLUEBERRIES AND 2 MULLER LIGHT YOGHURTS
