The day started off very well. We had friends over for halloween lunch and even by 5pm I was totally on track. And then the Trick or Treat sweets happened. and happened. and happened.

I've eaten a sack of chocolate.

Possibly due to it being my star week and the fear of starting work tomorrow?

Spaghetti and Meatballs

"On top of spaghetti, all covered in cheese, I lost my poor meatball, when somebody sneezed...."

I've been feeling rotten with another lurgy the past few days. Squirkys 4am starts aren't helping and poor Chunky Lover is also showing the signs of sleep deprivation.

We have all our most meaningful and eloquent conversations between 4-6am. By 6pm we enter the twillight zone where words and thoughts disappear from our minds mid sentence.

We're dreading tonight. The clocks go back, which is great for those kidless-free-as-a-kite-lucky-gits out there who simply get an extra hour to sleep or party. We'll just get a child that will refuse to sleep past 3am.

We tried keeping her up in the evenings but she simply passes out on the floor or in our arms.

This phase will pass I keep telling myself. She's lucky she so bloody lovable!

So I limp my way through the day coughing and sneezing and making spicey meatballs to try and blow the cold out of my chest.


WHAT WENT INTO DINNER FOR TWO:
  • 1 pack of Quorn swedish style meatballs
  • Passatta
  • Splash of balsamic
  • Tsp lazy garlic
  • Worcestershire sauce
  • Basil leaves
  • Spaghetti
  • Dash of tabasaco
  • Cheese (HEALTHY A CHOICE)
HOW I DID IT:
  • Make spaghetti as per pack
  • Heat meatballs as per pack
  • Make sauce with passatta, balsamic, Worcestershire, tabasco and garlic
  • Combine sauce and meatballs
  • Top with basil and cheese

Banger-Lasagne

Yesterday I felt really depressed. It was silly really as we have enjoyed so much good luck lately that I should be a smile personified. However, my hormones dictated that I would be weepy and maudlin instead.

My Chunky Lover said 'Come on love, cheer up. Eat your box of Celebrations and we'll get fish and chips in tonight, give yourself a break.' I said no straight away. One of the reasons I feel so low is that I really hate my body and eating syn laden food is not going to help with that.

Anyway, I have time 'off plan' booked for mid November when we move house, the end of November when we're going to a gig, the beginning of December when me and the kids go to Devon for a cream tea extravaganza and of course Christmas. So there is no point in going off plan when it isn't for a proper reason.

I've been spurred on by my 3lb loss yesterday and have some attainable mini targets to achieve before Christmas. 1) lose 3lbs to get under 14 stone, 2) lose 5lbs to get to 15% body weight loss and 3) 6lbs to get to two and a half stone.

WHAT WENT INTO DINNER FOR TWO:
  • Pack of weightwatchers sausages (1.5 SYNS PER SERVING)
  • 1 peppers, 1 red onion, 1 white onion, 1 courgette all diced
  • Jar of passatta
  • 112g cheddar cheese (HEALTHY A OPTION AND 6 SYNS PER SERVING)
  • 6 Lasagne sheets
  • Balsamic
  • Worcestershire sauces
  • Rocket
  • 2 tbsp very low fat fromage frais
HOW I DID IT:
  • Roast the sausages and vegetables in frylight for 20 minutes on a baking tray
  • Slice the cooked sausages into discs and mix with the vegetables, passatta, Worcestershire and balsamic
  • Boil lasagne sheets as per pack instructions
  • Layer a dish with the sausage mix, top with the lasagne, and repeat
  • Mix cheese with fromage frais and top the lasagne with it. Bake for 10 minutes
  • Serve with rocket salad

Bacon and Mushroom Orecchiette

Wednesday weigh in.....3lbs off!!! I'm rather pleased!!

I'm glad to have had this bit of good news as it's been a horrible day so far and it's only 08.10am as I write this first paragraph.

Squirky was up at 1am and stayed up until 3am, playing and gabbling her baby speak . When she finally slept it took me another hour to also fall asleep. 9She woke up for good at 5am when my Chunky Lover took over). I woke with a start at 7am and jumped out of bed as The Troll needed dressing as a witch for nursery. I entered the living room to find that whilst my Chunky Lover had made a bottle of milk for Squirky she'd set about destroying my best pumpkin creation - a cross eyed spider.

Feelings hurt I set about face painting The Troll. This is the second time in 5 days. The first was last Friday for a Halloween disco. She dressed happily but as I tried to paint her face she threw a massive paddy and refused to entertain the idea. I tried cajoling her. The nursery staff tried cajoling her. Nothing. We got to the disco and there was a face-painting stall, £1 a time.......guess who wanted a go?

Yesterday she insisted she wanted it done for nursery this morning, so I got out of bed, armed with sponges and brushes and no sooner had I slicked on a stripe of green the hystronics started again. So that's all she was adorned with. She looked a bit like a David Bowie/Witch hybrid.

By the time she set off to nursery and the pumpkin was in the bin I was already battered and bruised by the days events. A 3lb loss is just what I needed to put a smile on my face again.


WHAT WENT INTO DINNER FOR TWO:
  • Punnet of button mushrooms
  • Pack of lean bacon
  • Cherry tomatoes
  • Lazy garlic
  • Orecchiette pasta
  • 42g mozzarella (HEALTHY A CHOICE)
  • Basil
HOW I DID IT:
  • Make pasta as per pack instructions
  • Slice mushrooms and chop bacon into squares
  • Fry in frylight with the garlic and cherry tomatoes until the tomatoes are popping and the bacon is cook
  • Combine with mozzerella and basil and serve
(I planned my meals last week and had written on my planner 'bacon/mushroom pasta' which I was sure I had seen in this months SW magazine, but when I came to cook it tonight I couldn't find it. I had to think on my feet and made up the meal based on the ingredients I had bought. I later realised the recipe was in the calendar which I had thrown away.)

Fizzy Freezey Fruit

I'm so excited about tomorrows weigh in. I've been yo yo-ing for a few weeks and this is the first in a while that I've stuck to plan for 7 whole days.

The risk is that perhaps I'll put on as last weeks food excesses catch up with me. It would be great if I lost loads like a lot of people do in their first week.

I found this pudding idea on Facebook, where the comment simply read 'Thanks to whoever suggested covering frozen grapes in jelly crystals - my new fave!'. At first I thought the perhaps you take the frozen fruit and simply sprinkle the crystals over and eat. But then I decided it would fall off so I did it in the way the that follows below. However in retrospect I think my first interpretation would have been correct so will try that next time!

WHAT WENT INTO PUDDING FOR ONE:
  • Grapes
  • Blueberries
  • Sachet of Hartleys Jelly Crystals (1.5 SYNS)
HOW I DID IT:
  • Put fruit in a freezer bag
  • Add jelly crystals and a tablespoon of water and shake
  • Freeze and eat!

Mixed Grill

So the patch of skin that looked dry in the corner of The Troll's mouth has transpired to be impetigo. One of those infections that automatically makes you feel itchy when you say it. It's battle to get the cream on because it's so close to her mouth she can taste it.

Even though she had that bitter taste in her mouth, her mood was lightened when we carved 4 pumpkins. I know I should use the scoopings out in a pie or something but I can't bear the smell so I binned it.

However, I'm finding inspiration in the Slimming World magazine today and also getting into the ethos of using up your left overs, so yesterdays leftover gammon joint is forming part of a meat medley in our mixed grill.

Oh, and I was given a box of Celebrations today as a thank you. What's the rule on chocolate given as a gift? I can eat it and it's syn free right?

WHAT WENT INTO DINNER FOR TWO:
  • Leftover gammon joint
  • Small fillet steak
  • 6 Weight Watchers sausages (1.5 SYN PER SERVING)
  • Slimming World chips (made with frylight)
  • Beef tomato
  • Field mushroom
  • 1 tsp honey (0.5 SYNS PER SERVING)
  • 2 tbsp very low fat mayo (0.5 SYNS PER SERVING)
HOW I DID IT:
  • Cut potatoes into chips and par boil
  • Bake on a preheated baking tray for 40 minutes, turn and spray with frylight every 10 minutes
  • Roast the sausages, mushroom and tomato (I dabbed lazy garlic on the mushroom and added honey to the tomato - it's meant to make it taste tomato-ier)
  • Pan fry the steak with steak seasoning

Honey Glazed Gammon with Pineapple & Egg, Baked Potato and Rocket Salad

I have been sorting the flat out ready for the move. I put some baby bits on a recycling website and someone is coming to collect tomorrow.

I gave them a good clean and pulled a bag down from in top of the kitchen cupboards to put them in. As I bent to put them away I felt this sting on my neck. I brushed at it and a spider fell to the floor. The little bugger had given me a vampire style bite to the neck.

I'm ashamed to say I immediately burst into tears, convinced I would die in the next 30 seconds and called for my Chunky Lover who scooped it up in Tupperware and took it off to the internet to see what kind it is.

We couldn't work it out but I'm not dead yet, so that's good.

WHAT WENT INTO DINNER FOR TWO:
  • Tesco honey glazed gammon joint
  • 2 baking potatoes
  • Cheese (HEALTHY A OPTION)
  • 2 pineapple rings (1 SYN)
  • 2 eggs
  • Rocket
  • Cherry tomatoes
HOW I DID IT:
  • Roast gammon as per pack instructions
  • Bake two potatoes sprayed with frylight and wrapped in foil for 1 hour
  • Fry the egg and pineapple in frylight
  • Top gammon with pineapple and egg
  • Top potatoes with grate cheese
  • Serve with rocket and roasted cherry tomatoes

Pesto Crusted Haddock and Apache Potatoes

I've been letting The Troll watch the X Factor. She missed it last week as she was with the In-Laws from Heaven, but I told her today she could watch it with me tonight.

"And can we phone the lady again and ask her to bring noodles and rice?". She has a good memory - 2 weeks ago we ordered Chinese.

I said no, but she was equally happy with the fish, sweetcorn and broccoli I served her whilst my Chunky Lover and I had "Pesto Crusted Haddock and Apache Potatoes"

WHAT WENT INTO DINNER FOR TWO:
  • 200g tinned tomatoes
  • 1 tsp lazy garlic
  • 90g sun dried tomatoes (5 SYNS PER SERVING)
  • Tsp lazy chilli
  • 2 Youngs haddock fillets
  • Basil leaves
  • Spinach (with garlic salt)
  • Apache potatoes (rosemary, 2 tbsp extra virgin Olive Oil HEALTHY B CHOICE)
HOW I DID IT:
  • Blend both types of tomatoes, garlic and the chilli until you have a paste
  • Cook haddock as per pack instructions and half way through add the paste
  • Roast the potatoes as per pack
  • Wilt the spinach in a dry pan with a few sprinkles of garlic salt

Tricolore Spaghetti

I watched an episode of Kirstie Alley's Big Life yesterday. I watched it in snatches as I attended to the needs of Squirky and prevented her on many occasions from shutting the door on her fingers, from slamming the table leaf on her head and from climbing up the sofa and falling off...the list goes on. I don't remember The Troll having such a kamikaze attitude to life.

Actually, now I think about it...The Troll was this determined and curious, except she had the gumption not to actually hurt herself in the process. Something Squirky lacks a little.

Anyway, Kirstie had her first weigh in and she weighs the same as my starting weight which was 16 stone4. It was interesting to have a visual comparison to see how far I had come. She certainly looked bigger than I felt when I started to lose weight. I shall watch the rest of her journey with a vested interest.

I'm still totally on plan. Tonight my Chunky Lover has asked for a prawny pasta dish and this is what he got: Tricolore Spaghetti


WHAT WENT INTO IT FOR TWO:
  • Tesco Finest shelled jumbo prawns defrosted
  • 150g Spaghetti
  • 2 tsps lazy garlic
  • 75g spinach
  • Lemon zest
  • Cherry tomatoes

HOW I DID IT:
  • Make pasta as per pack instructions
  • Fry garlic in frylight for a moment then add spinach and continue to fry until wilted (couple of minutes)
  • Add prawns and seasoning for two more minutes
  • Add pasta and mix through
  • Finally add lemon zest and tomatoes

Sticky Lemon Chicken and Egg Fried Rice

Wednesday weigh in and it's 2lb on. Worth every last ounce.

I didn't have the girls for four blissful nights. I missed them but I didn't miss the 4am starts to the day. It has shaken me up a bit getting them back from the In-Laws from Heaven. I've lost my mojo and gotten a bit selfish. It feels odd having to think about feeding them before I can think about what I'll do for breakfast.

As I write I'm watching Squirky ignore the pile of bright flashing musical toys and aim for the roll of sticky labels I've been using for ebay parcels and attempt to tip my water bottle on the floor.

Mentally getting to grips with child care again has left little brain space for food awareness but managed to stay on track today. I am reliably informed by Jamey on Facebook that I can make a lemon sauce for chicken dishes, but I had this packet on the cupboard that needed using, and I have syns to spare so no problems in using it. I'll do the home-made version next time to do a taste test. Tonight's dinner shouldn't be hard t beat as I turned my back for a few moments and I burnt it to smithereens.


WHAT WENT INTO IT FOR TWO:
  • Blue Dragon lemon sauce (4 SYNS PER SERVING)
  • Chicken pieces
  • Boil in the bag Tilda basmati rice
  • Pak choi
  • 10g cashew nuts (1.5 SYNS PER SERVING)
  • 1tbsp honey (0.75 SYNS PER SERVING)
  • Egg - beaten
  • Coriander
  • Juice and zest of a lemon

HOW I DID IT:
  • Brown the chicken with frylight
  • Add quartered pak choi and continue to fry
  • Add the crushed cashew nuts, sauce and honey and leave to cook until chicken is done
  • Meanwhile make rice as per pack instructions and use the egg to make egg fried rice (whilst rice is in pan, add egg to centre, leave for a moment until partially cooked then mix through rice)
  • Top with coriander and lemon


BREAKFAST: PUDDING RICE, YOGHURT AND FRUIT ; LUNCH: BAKED POTATO, CHEESE (HEALTHY A OPTION) TUNA, MAYO (0.5 SYNS PER SERVING); DINNER: "STICKY LEMON CHICKEN"; SNACKS: BOWL OF SUPERNOODLES - THE FLAVOURING DIDN'T SEEM TO ABSORB SO THEY WERE DISGUSTING, 2 ALPEN LIGHT BARS (HEALTHY B CHOICE), 1 YOGHURT; PUDDING: FROZEN BLUEBERRIES AND MANGO WITH TWO MULLER LIGHTS
