Autumn Beef Casserole

5 days off plan. 5 awesome, momentous, life changing days.

Since I last blogged I have drunk various sparkly multicoloured cocktails, sampled the finest Tapas the south coast has to offer and fulfilled a lifelong ambition to eat a Heston Blumenthal creation (albeit at the Little Chef rather than the Fat Duck).

Also since I last blogged we have found and signed a tenancy on a new house (yes! HOUSE! with stairs and everything) and got a new job.

There must have been some kind of strange planetary alignment starting Thursday because this whole weekend has just be one fortunate and beautiful moment after another. We even won £10 on the lottery.

I ate heartily all weekend, but it was all about quality rather than quantity and I thoroughly enjoyed every mouthful of everything I ate. Every pound gained will be worth it.

Back on plan now though. Between now and our big move I can see no reason that I will need to abstain from Slimming World, so here's to 4 weeks of losses.

When we move we will have to eat pizza. It's the law that you must eat pizza the day you move into a new house.

Dinner tonight is an autumnal Beef Casserole.

WHAT WENT INTO IT FOR TWO:
  • 400g lean beef cubes
  • 1 sweet onion, sliced
  • 150g button mushrooms
  • Carrot, cubed
  • 85ml red wine (1.5 SYNS PER SERVING)
  • 400ml Passata
  • 200ml beef bovril stock
  • Bay leaf
  • Seasoning

HOW I DID IT:
  • Brown the beef in pan with frylight
  • Add onion & carrot and leave for 2 mins
  • Add mushrooms, herbs, stock, passata and wine and leave on low heat for an hour (covered)
  • Remove lid for last 10 mins


BREAKFAST: SCRAMBLED EGGS, CUP OF TEA WITH DASH OF MILK (0.5 SYNS) ; LUNCH: PASTA, BASIL, CHEESE (HEALTHY A OPTION) HAM, GRAPES, 8 OLIVES (1 SYN); DINNER: "AUTUMN BEEF CASSEROLE";SNACKS: 2 ALPEN LIGHT BARS (HEALTHY B CHOICE), 2 YOGHURTS; PUDDING: FROZEN BLUEBERRIES AND MANGO WITH TWO MULLER LIGHTS

  2. Fish and chips is another option! You need a reward after lugging all those boxes around!
