I took The Troll to see Father Christmas in the sinister grotto at our local shopping centre. The theme seemed to be Gurning & Evil Alice in Wonderland juxtaposed against exposed wiring and overloaded gangplanks. Very festive.
Still, The Troll saw past all that and was memorised by the fairylights and nutty high pitched carol soundtrack and followed the Tallest-Christmas-Elf-in-the-World into Santa's lair. I mean grotto.
It has to be said he was a superb Santa with twinkly blue eyes and when the Troll told him that Squirky keeps pulling all the decorations off the tree he said 'that means you have extra fun in putting them back on again'. Ahhh trust jolly old Santa to put a happy festive swing onto something I was beginning to get quite irritated about myself.
The Christmas invites are coming thick and fast now so the dieting days will become fewer on the ground. And if it's not Christmas do's then it's X-Factor parties. Xmas and XFactor - what a winning crimbo combo.
Ho ho ho - I'll have a tummy fatter than Santa's by January.
WHAT WENT INTO IT FOR TWO:
- 1 pack of Gallo Pronto Risotto - Sun Dried Tomato Flavour
- 1 red onion
- 1 clove of garlic (I love the ready peeled fresh ones from Tesco)
- 350g chicken mini fillets
- a few glugs of balsamic vinegar
- 2tbsp extra virgin olive oil (HEALTHY B OPTION PER SERVING)
- 56g cheese (HEALTHY A OPTION PER SERVING)
HOW I DID IT:
- Place the chicken fillets in an oven proof dish and cover with balsamic so all of chicken is covered. Roast for 25 minutes
- Dice the onion and garlic finely and fry in olive oil
- Make risotto as per pack instructions
- Combine the onion, garlic and risotto
- Top with pieces of chicken and cheese
