Too Much Stirfry

And once again, a loss despite 2 days of decadence over the weekend.
I could get used to this...have every weekend off but keep losing weight....

But the reason why I think this happened was because I was so anxious in the week I could barely bring myself to eat. This is highly unusual for me and an experience I don't wish to repeat.

I've decided not to go to class any more now my count down has run out. I only stop in to get weighed and never stay for image therapy. Instead I'll weigh myself at home on the Wii and call the SW helpline when I need to check syns on something.

I'll pop my £4.50 in a jar each week and when I lose 7lbs I'll use the money to treat myself to something....

So I want to get to 14 stone 2. Ideally before our holiday at the end of May. If I stay anxious and worried about work I may just get there!

RECIPE OF THE WEEK
Spray a wok with frylight and fry BEEF STRIPS for 8 minutes.
Chuck in a tub of RAINBOW STIRFRY VEGETABLES and serve with EGG NOODLES and SOY SAUCE

Fish and Chips

2lbs off tonight, which isn't bad in anyone's book, but is especially amazing for me as I ate like a pig all weekend. The usual suspects: peanut butter on toast, chocolate, cocoa cola, chips, quarter-pounders. And a couple of fancier options too: chicken pate on crostini, croissant and brioche bread and butter pudding and rhubarb Bellinis.

So I got to have my cake and eat it this week.

Before my blow out weekend I stuck to plan religiously. Even when my Chunky Lover and The Troll popped out on Friday night for a fish and chip supper, I was saintlike and removed the batter from the fish and made my own chips. It was worth it to sit with the family and all enjoy a treat together, without feeling like the odd one out.

RECIPE OF THE WEEK
Spray a baking tray in frylight and heat in a very hot oven
Cut baking potatoes into chunky chip shapes. Boil for 7 mins then drain and leave to cool.
Shake to roughen edges.
Spread across baking tray and bake at top of oven on highest heat for about 45 mins. Sprinkle with salt and spray with frylight twice during cooking time.
Strip your fish, fresh from the chippie, of its batter. Weep as you throw the batter in the bin.

Balsamic Chicken and Roasted Vegetable and Rocket Salad

There are certain things that fall firmly under My Chunky Lover's household remit. Taking the bins out. Carrying anything heavy. Doing the early shift with Squirky (they are both early risers). Driving. And there are certain things which are clearly my responsibility. Cooking. The weekly shop. Organising the household diary....

Every now and again I try and shake things up a bit and attempt to get My Chunky Lover to cook us an evening meal.

This happens about 4 times a year. The asking part is always difficult (he is a reluctant cook) but the meal is always truly delicious. He is a far superior cook to me.

The conversation this week went

Me: I'm making chicken and spinach curry tonight
Him: Don't bother for me, that's sounds disgusting. I'll have toast
Me: (Keeping the swear words in my head... ungrateful wretch!) But I have a whole pack of chicken defrosted now, I'll think of something else. I know, I'll do chicken roasted in balsamic vinegar and roasted veg. I've got some salad too. And in fact why don't you cook it?
Him:..................................................................................
Me: Babe? Why don't you cook it?
Him: How?...
Me: Erm....? You roast the chicken in balsamic vinegar....and you roast the veg...and you put salad on plates......

So once he'd mastered that, he served up dinner and once again it blew anything I ever cook right out of the water. I just wish he was more willing!

I stayed on track all week until Sunday afternoon. We had guests and I ate a diet version of what the were having (they had pizza and salad, I had the same without the pizza....), so when they produced a Banoffee Pie for pudding I decided to have a slice. I hadn't had more that 2 syns a day all week, so I knew I'd be covered.

However, after that slice the floodgates opened and when they left I finished off the left over pizza, had three chocolate bars, buttered toast and a load of cherry tango.

Not good. 0.5lbs on - all because of 4 hours binging.

RECIPE OF THE WEEK
Place CHICKEN BREAST in an over proof dish and drench in BALSAMIC VINEGAR.
Roast on a medium heat for about 50 mins
Roast sliced RED ONION and CHERRY TOMATOES in FRY LIGHT for the last 30 mins (give additional squirts of FRY LIGHT whilst roasting)
Serve ROCKET on the plate and top with the roasted veg and chicken.
I added 8 OLIVES (1 SYN) and 28G CHEESE (HEALTHY A OPTION)

You know things are bad when you start getting calls at home from your Slimming World consultant.....

Over the last three weeks I had managed to get my weight to OVER the weight I was when I started back at Image Therapy.

But I hope I have made her proud this week. I managed to stay on track for 7 days and lost 6lbs in doing so.

I've managed to secure a few more months of work, so I'm feeling a bit more settled within myself. I need to start concentrating on digging up some new meals for the family, that only take minutes and taste fabulous.

I really miss the halcyon days of having a whole afternoon to prep up ingredients and concentrate on flavours. Maybe I should have another baby and take another year off???? I'm sure my Chunky Lover would LOVE that! Ha ha ha!

A Working Mums Breakfast

At the risk of repeating myself - I find myself starting afresh again today! Have you heard that one before?


I haven't had a Slimming World day in at least 3 weeks and it shows.
I didn't even go to class last week. The shame.

When I weighed in tonight it turns out I now weigh more than when I started the class at the beginning of Jan!

I have many excuses for my terrible gain. Partly the emotional eating I mentioned in my last two blogs, but also My Chunky Lover and I celebrated two years of marriage this week. How better to celebrate this wondrous occasion but to use Tesco vouchers to pay for a two night hotel break in the countryside, leaving the kidlets with the In-Laws-From-Heaven.

We focused mainly on sleeping and eating. The eating was INCREDIBLE! Two amazing meals out (pork belly, tapas, white chocolate mousse....), hotels breakfasts (eggs benedict, full English, hot buttered toast) and snacking (toffee chocolate fingers, toffee apple pies, pink milk).

And now it's back to healthy eating and being a mum again. The Troll has developed a bit of an attitude. She's like a 4 year old teenager. This evening, after refusing dinner and pretending to each parent that the other had allowed her to turn the telly on, I asked her to start proving that she can be a good girl.

"Okay mummy" she said and walked the length of the room and back "Look - I didn't hit my sister!

RECIPE OF THE WEEK
Boil a handful of pudding rice until soft - pack in tupperware and hopefully it will still be vaguely warm by the time you reach work
Stir in yoghurt and a handful of previously frozen fruit - tasty filling syn free breakfast - save your healthy choices for an alpen light to dip in your tea like a biscuit later on.

It's been a pretty emotional week, and I'm an emotional eater - hence the massive gain this week. Not happy about it, but it's not as if it is a shock. I barely cooked a thing all week. It's been bacon butties for breakfast grabbed from the dirty van across the road from work, and stodgy canteen lunches and takeaways for dinner. I've been snacking on chocolate and guzzling coke. Pretty shameful really.

I ate a muller lite one day and that was about as close to Slimming World as I got until Sunday afternoon when I made SW Lamb Rogan Josh, just because we fancied it, not because I'm back on track.

To top it off, Squirky had an almighty tantrum this morning which ended when she jabbed her tiny baby finger into my eyeball. I decided I needed a time out of my own at this point and retired myself to the kitchen. I left the girls to worship their God (watch CBeebies) whilst I made a cup of tea and took some deep breaths. My eye is red and inflamed. I look like a crazy woman. Maybe some more chocolate will help?

Rustic Sausage Pasta

I had a little gain last week and it made me determined to stick to plan this week. I had no dates in the diary that couldn't cope with conforming with Slimming World.

I was 100% faithful to SW all the way to Friday afternoon, life ticking merrily away, the usual gripes and grumbles, but all par for the course.

Until 2pm, at which point myself and colleagues were summoned to a little office and were informed in the presence of our friendly HR representative that our services were no longer required..............( a bit of a shock given I've only been back in full time employment for three weeks!)

Slimming World kind of didn't seem all that important any more. We got outside and one of our team offered a round of hot drinks. I refused at first, but then accepted a large hot chocolate. The sugar rush seemed to help, so I carried on with the chocolate theme for the rest of the day.

3 days on, there are still tears and chocolate, but I'm hoping that redundancy *might* be the best thing to happen to our family.

A fresh start.


But who's gonna hire a fat girl......?


RECIPE OF THE WEEK

Rustic Sausage Pasta

WHAT WENT INTO IT FOR FOUR:
  • 8 Sainsbury Be Good to Yourself sausages (1 syn per portion)
  • Pasta
  • 400g tin of chopped tomatoes
  • Loads of peas
  • Red onion
  • Garlic

HOW I DID IT:
  • Fry the diced garlic, sliced onion and chunks of sausage until sausage cooked through
  • Add tomatoes and continue to heat
  • Meanwhile boil the pasta, and 5 mins before ready add the peas
  • When pasta is cooked, add to sausages and tomato and stir through

Prawn, Butternut and Edamame Stirfry

I pride myself on my organisational skills. Right now they are being pushed to their limits trying to combine full time work, being a mother of two and trying to organise SW friendly meals that I can happily feed to the whole family and in under 30 minutes.

I am managing......just. But it has to be said, Tesco are not helping me out much.
I have confessed to my love hate relationship with them in the past, but this month they have managed to remove any love from that equation.

I have placed three orders with them over the past 21 days and not one of them has arrived when it was meant to. If at all.

Us Slimming Worlders know that planning is crucial to ensuring we stick to plan. And us mums know that planning is key to keeping your family life from falling apart at the seams. Part of my planning is a weekly meal menu, and an online food order which should arrive just as we are running out of the essentials.

Not if Tesco has anything to do with it.

The first problem was at the beginning of Jan. I placed an order, but then baby Squirky was rushed to hospital and I stayed with her there for 4 days. We postponed out online order, but when we got home we had a missed delivery card and informed we'd be charged still for delivery. I checked my Tesco account and could see the order shouldn't have been delivered until the next day but the call centre staff were adamant it was in their system for the day before, but refunded the delivery as good will. It meant as far as they were concerned that the order was cancelled. So much for planning.

The next week I waited for my order, but it didn't arrive. I checked my account and it showed as 'delivered'. I called the call centre who informed me it was in their system for the next day and that they have a fault in the system where some customers who change their delivery date will still get their orders on the old date. Not much use to me.

They apologised, said delivery issues were rare, and I placed another order for the following week between 6-8pm.

I phoned twice to check it was definitely coming. "Yes" they said.
6pm came and went. 7pm came and went. 8pm came and went. I get a call - the driver is running an hour late. 9pm came and went. I call again they say they will look into it and will call me back. 9.45 I call them again. They tell me my order has been cancelled due to staffing issues. They will refund me though. Too right they will refund me!

I go to be in tears of frustration, trying to work out what we will eat tomorrow and when I will have time to get shopping. I go to sleep.

23:15 the doorbell goes. It's my food! Or at least some of it.

The next day I get an email apologising again for the cancellation. I have to tell THEM it actually arrived.

This 'helpful' service is causing me more stress than it's alleviating.

So that's it. No more Tesco online shopping for me. I'm giving Sainsburys a go.

FOOD DIARY AND RECIPE OF THE WEEK!

Prawn, Butternut and Edamame Stirfry

WHAT WENT INTO IT FOR FOUR:
  • 400g fantail prawns
  • 420g Tesco Butternut and Edamame Stir Fry
  • 3 slabs of egg noodles

HOW I DID IT:
  • Fried the prawns and stirfry mix in a wok in fry light
  • Boiled the egg noodles
  • Combine!
BREAKFAST: 2 BANANAS, 2 CUPS OF TEA (WITH MILK FROM HEALTHY A OPTION); LUNCH: PLAIN BOILED RICE, GREEN SALAD, TOMATOES, OLIVES AND A DRESSING (WAS EATING AT A WORK MEETING - GAVE MYSELF THE FULL 15 SYNS BUT ASSUME IT WAS FAR LESS) ;DINNER: "PRAWN, EDAMAME AND BUTTERNUT STIR FRY"; SNACKS: 2 ALPEN LIGHT BARS (HEALTHY B OPTION);PUDDING: BLUEBERRIES, MANGO AND YOGHURT

I haven't spoken to a person all month that hasn't told me of how Christmas was ruined because they, or someone in their family was incredibly ill.

For our part baby Squirky was in hospital for 4 days, which was traumatic initially because of how unwell she was, and traumatic later when she was well enough just to be observed because it gave me a moment to look around and see how many other ill children there were and what a desperate state they were all in.

What with that, our pre-xmas flu and general sniffles you'd think we'd have had all the illness one family could cope with. But no. This week the theme of the house has been 'vomiting and diarrhoea'. On Thursday I did 5 loads of washing. We didn't have a single clean towel left in the house at one point. At another point I had 8 scented candles burning, so as to mask the evil smell. The girls and My Chunky Lover haven't been able to face food, and when I coax it into their mouths it comes straight back up again.

And the injustice of it all? I didn't get it at all. A tummy bug is a sure fire way to lose a pound or two and get some looking after and sympathy but of course it bypassed me completely. ;)

  • Young's Prime Fillet of Atlantic Cod in herbs, garlic and tomato ( 1.5 SYNS)
  • Maccains rustic over chips 200g (5 SYNS)
  • Spaghetti hoops
  • 1 tbsp very low fat mayo (0.5 SYNS)

HOW I DID IT:
  • All as per pack instructions!! Sorry not a recipe as such, but check out that meal!!!!

Carvery Lamb Leg with Garlic & Rosemary and all the Trimmings

Squirky turned one last week, much to my dismay. How can my tiny baby be one already? I spent the day veering between jelly and ice cream party based happiness and nostalgia induced sobbing.

I got through it with the aid of Devils Food cake.

Once I had got over the trauma of the inevitable passage of time, my thoughts returned to dieting. The big question going through my mind is "how comes it only took 9 months of pregnancy to put on about 5 stone and yet in over a year I can't drop 2 stone?" That just seems unfair.

My focus is renewed (again!) since rejoining my local SW class last Monday. I planned a weeks worth of meals focusing on things that can be on the table within half an hour given I get home from work at 6 and the girls need to be fed, bathed and ready for bed by 7. The Troll helped out in the new routine by attempting to teach Squirky how to brush her teeth, starting her educational speech with 'First you need to spread out your teeth...'

We had an incredible Sunday roast this week. I know that normally on SW you'd pick meat with all the fat trimmed off, but sometimes it's worth spending syns to get a proper roast. I chose a family sized leg of lamb, already trussed and seasoned by the helpful people at Tesco. The whole thing was 9 syns and I ended up eating half of it by picking on left overs as well as the meat that was actually served on my plate. It still only cost 4.5 syns.

FOOD DIARY AND RECIPE OF THE WEEK!

Carvery Lamb Leg with Garlic & Rosemary and all the Trimmings

WHAT WENT INTO IT FOR TWO:
  • Tesco Carvery Lamb Leg with Garlic and Rosemary, 942g (4.5 syns per serving)
  • Potatoes, sweet red peppers and leeks roasted in frylight and extra virgin olive oil (HEALTHY B OPTION)
  • Peas, sweetcorn, carrots
  • Make 142ml of gravy as per pack instructions, but then empty into a wide an and add garlic, balsamic and 30ml red wine (3.5 syns per serving) and simmer for 20 minutes

HOW I DID IT:
  • Roasted meat as per pack instructions
  • Par boiled potatoe chunks for 7 minutes and roasted in preheated oven with halved leeks and peppers for 30 mins. Spray with frylight and season with salt and garlic
  • Boil remaining veg!
  • Made gravy as per pack instructions, adding a dash of balsamic, red wine and a little bit of grated garlic
BREAKFAST: PUDDING RICE WITH BLUEBERRIES AND VANILLA YOGHURT; LUNCH: "CARVERY LEG OF LAMB";DINNER: POTATO WEDGES IN HOT BUSH TUCKER SEASONING, 1TBSP VERY LOW FAT MAYO (0.5 SYNS) AND SPRINKLED WITH MELTED CHEESE (HEALTHY A OPTION); SNACKS: CUP OF TEA WITH DASH OF MILK (0.5 SYNS);PUDDING: BLUEBERRIES AND YOGHURT

I'm Back and This Time I Mean It.

Two apologies. One to anyone that may have been reading my inane witterings and come to expect a regular update. I'm sorry I haven't updated in a while. I have been being bad

The second apology is to myself. Not for dropping off the plan but for not doing it in style. I ate like a pig for four weeks but I didn't eat anything other worldly delicious, I just ate anything that came to home. I ate my babies taste-free rice cakes, the strawberry creme roses chocolates (that I hate) and the scraps from the kids plates. It was pointless gluttony and I am paying for my syns.

But it's all been about new beginnings today:

  • I returned to full time employment. I am no longer a stay at home mum. This makes me sad and want to reach for the biscuit tin. But I shan't.
  • I joined the work gym and will do my first pilates class on Wednesday and perhaps Zumba if I can work up the confidence
  • I rejoined my local Slimming World class and oh my god - I weighed in at 15st 2.5lbs. A gain of 15.5lbs in 4 weeks.

My excuses:
  1. Different scales. I'd been using the Wii, now using SW scales = 4lb gain
  2. Different time. On maternity I'd weigh in at 9am, now it's 5pm = 4lb gain
  3. At home I weigh in naked. Apparently this is a no-no in class = 4lb gain
  4. Which means I only really gained 3lbs through overeating over Christmas right?....

No more excuses, back on track and a whole new start.
I'm ignoring my loss from last year, my new start weight is the one I got at class this week.

Here we go.......
